Does rice flour contain gluten? No: rice is a naturally gluten-free cereal. But once rice is turned into flour, for someone with coeliac disease it is not enough to know which cereal it comes from: how the product was processed and what the label states also matter.

For this reason, rice flour intended for a gluten-free kitchen should clearly carry a gluten-free statement.

Does rice contain gluten?

No. Rice grains are naturally gluten-free and are among the cereals allowed in a gluten-free diet.

The situation changes when the grain is milled or processed. Flour may be produced in facilities that also handle gluten-containing cereals, so the risk of cross-contamination must be considered.

For a broader overview, read Which grains contain gluten and which do not?.

So is every rice flour suitable for people with coeliac disease?

Not automatically. Rice is naturally gluten-free, but flour is a processed product.

For people with coeliac disease it is therefore important to choose flour that is clearly labelled gluten-free and has been handled appropriately during milling, packing and storage.

In the European Union, the term “gluten-free” may be used when the final product contains no more than 20 mg/kg of gluten.

White rice flour and brown rice flour: does gluten change?

No. If both are made exclusively from rice, neither white nor brown rice flour naturally contains gluten.

The difference mainly concerns which parts of the grain are retained, as well as flavour, colour and behaviour in doughs and batters.

The choice between white and brown rice flour therefore depends on the recipe and the result you want, not on the natural presence of gluten.

Why should you still read the label?

Because there is a processing step between a grain of rice and a bag of flour.

Milling, transport, storage and packaging can take place in facilities that also handle wheat, barley or other gluten-containing cereals.

When buying flour for someone with coeliac disease, it is therefore better to check for a gluten-free statement rather than relying only on the fact that rice itself is naturally gluten-free.

Does rice flour behave like wheat flour?

No. Rice flour does not develop the elastic network created by gluten.

That means it cannot always replace wheat flour in the same amount and with the same method. In some recipes it works very well on its own; in others it performs better together with other flours chosen to balance structure, absorption and texture.

Which rice flour should you choose?

It depends on the use.

Fine white rice flour is suitable for delicate doughs, cakes, creams and preparations that need a very fine texture. See our Fine white rice flour.

Brown rice flour has a more pronounced flavour and a different composition because it retains more of the grain.

For frying and some coatings, a medium grind can be useful instead. So there is no single “rice flour”: milling changes how it behaves in the kitchen.

Can rice flour be used in desserts?

Yes. Its mild flavour and fine texture make it one of the most versatile flours in gluten-free baking.

It can be used for cakes, biscuits, creams and pastry, but the amount and combinations should be chosen according to the recipe. In a soft cake, for example, combining it with other naturally gluten-free flours can be helpful.

Can it be used for fresh pasta and savoury doughs?

Yes, although it often works better as part of a balanced blend.

For fresh pasta, flatbreads, crêpes and other doughs, rice flour on its own can be more fragile than a combination of complementary flours.

The choice should therefore be based on the result you want, not only on the absence of gluten.

What if you are cooking for someone with coeliac disease?

Use flours declared gluten-free and pay attention to preparation as well.

Utensils, containers, scales, worktops and spoons must not be contaminated by gluten-containing flours. Even correctly labelled gluten-free flour can be contaminated after opening if it is handled incorrectly.

In short: does rice flour contain gluten?

No, rice is naturally gluten-free.

For someone with coeliac disease, however, flour is a processed product: choose a package that clearly states “gluten-free” and handle it carefully to avoid contamination.

After that check, choose the grind best suited to your recipe: fine for delicate preparations, brown rice flour for a stronger flavour, and medium grind for specific uses such as frying and coatings.
