Ingredients for approximately 20 lady's kisses

1 egg
100g butter
50g grated Parmigiano Reggiano
1 pinch of fine salt
40g chopped almonds
250g Mulino Marello wholemeal rice flour
150g spreadable cheese with aromatic herbs

Procedure

    In a mixer, add the Mulino Marello brown rice flour, the parmesan and the very cold diced butter. Process for a few seconds until you obtain a sandy mixture.

    Transfer it to a shelf and add the salt, the previously finely chopped almonds and the egg. Knead with your hands until you obtain a dough. Wrap it in cling film and place it in the refrigerator for 1 hour.

    After this time, detach some pieces of dough from the dough and form balls, preferably all of the same size. Place them spaced apart on a baking tray with baking paper and put them back in the fridge for another hour.

    Bake them while still cold at 180° in a preheated static oven and cook for 15 minutes.

    Once cold, fill them with the herb spreadable cheese and pair them two by two.
