Mix the flours in a bowl, add the bicarbonate of soda together with the juice and zest of half a lemon. Add oil, vegetable drink and coconut sugar and mix. You must obtain an easily workable dough to spread on your mold. Keep a small part aside to decorate the surface. Fill with the fruit compote and complete with the remaining patterned pasta. Cook at 180 degrees for about 20 minutes. Leave to cool and decorate with strawberry slices and chia seeds.
In spring and summer, fruit tarts should not be missing from our breakfasts.
They must be like this, rich in fiber and wholemeal, low in sugar and embellished with seeds and fresh fruit.
Inevitable now with strawberries, but we can soon indulge ourselves with cherry, blueberry, raspberry and peach tarts.
A genuine way to start the day with energy, nourishment and good mood.
A way to renew traditional tarts in taste and shape regardless of our need to eat gluten-free.
This dough has a rustic and porous flavor thanks to the wholemeal corn flour, truly perfect for making shortcrust pastries. Choosing not to use butter, milk and eggs is possible, it guarantees an extremely light and digestible result, certainly preferable in the heat, also due to the easy perishability of the classic ingredients.
I like to prepare my tarts like this, simple and imperfect, scented with home, but full of love for us and for those who will eat them in our company.
I also remember that strawberries are one of the fruits richest in vitamin C, a precious antioxidant essential for keeping us young, strengthening the immune system, making the skin and our tissues toned and elastic.
The strong point of this vegan strawberry tart is the richness of fiber contained in the flours, but also in the fruit and chia seeds rigorously added raw. Help to gently activate the intestine which often tends to get lazy in this season. If you don't have chia seeds, replace with sunflower seeds or chopped almonds.
