
Ingredients
150 gr Mulino Marello sorghum flour
50 gr Mulino Marello brown rice flour
40 ml rice or corn oil
half a teaspoon of bicarbonate of soda
juice and zest of half an organic lemon
Approximately 100 ml of water
2 or 3 tablespoons of coconut sugar
organic cherry or black cherry compote without added sugar to taste.
Approximately 20 cherries
3 tablespoons organic rapé coconut
Procedure
Prepare the pastry by mixing the flours, bicarbonate of soda together with lemon juice and zest, coconut sugar, oil and water in a bowl. Knead and if necessary add more water or brown rice flour. Roll out the dough on the toritera and keep the edges high. Stuff with compote. Cook in the oven at 180 degrees for about 20 minutes. Leave to cool and add the chopped cherries added raw and a generous sprinkling of grated coconut. Store in the refrigerator.
