
Ingredients for 2 people
150 ml water or organic rice drink
2 tablespoons of Mulino Marello rice semolina
whole grain salt to taste
3 tablespoons of extra virgin olive oil
turmeric to taste
juice of half a lemon
Approximately 200g of potatoes
Approximately 150g of fresh green beans
About 150g of carrots
Procedure
Let's start with the vegetable mayonnaise by mixing the water or vegetable drink with the rice flour and salt in a saucepan. Turn on the heat and boil until it reaches a good consistency.
Turn off the heat, add the oil, a squeeze of lemon, a pinch of turmeric or alternatively curry or mustard and blend for a couple of minutes. Leave to cool in the refrigerator for a couple of hours. In the meantime, blanch the vegetables cut into small pieces in a little water for about 10 minutes. Be careful not to overcook them. Drain and rinse with cold water. When everything is cooled, add the vegetables to the vegetable mayonnaise, mix and serve.

It seems that this recipe, like many others, was born as a casual combination of ingredients by a Belgian chef and a diner in a luxury French restaurant in Moscow. Over the years the ingredients changed and caviar, crab and partridge were soon replaced by carrots and peas.
Today I offer you my plant-based reinterpretation that will make this classic summer dish very digestible, low in fat and truly suitable for everyone, certainly not the prerogative only of those who have chosen a vegan diet.
We favor homemade preparations and the purchase of raw materials over treated industrial products rich in preservatives, fats, thickeners, flavorings and sugars.
In a very quick way we can obtain a tasty and delicate Russian salad to bring to the table not as an appetizer, as tradition suggests, but as a single dish together with a generous mixed salad, steamed potatoes or to fill a piadina made with Mulino Marello brown rice flour.
