Ingredients for approximately 6-8 pieces
150 gr Mixture of natural flours for Mulino Marello cakes
100 g Mulino Marello brown rice flour
Half a sachet of baking powder made with bicarbonate of soda and cream of tartar
Approximately 250 ml of organic rice drink
50 ml of rice oil
A spoonful of rice or agave syrup
2 tablespoons organic pine nuts
A small bunch of white or red grapes
Procedure
Rinse the grapes and cut the berries in half to remove the seeds. In a bowl mix the flours, natural yeast, oil and vegetable drink. If desired, add a spoonful of rice syrup or other natural sweetener. Add about 5-6 spoonfuls of seeded grapes and mix. Pour the mixture with a spoon into the appropriate miffin molds and complete with other grapes and pine nuts. Cook in the oven at 180 degrees for about 15 minutes.
Autumn truly offers us an infinite number of sweet fruits to use for our recipes. They give flavour, colour, originality, delicate fibres, but above all a natural sweetness which allows us to omit the sugar or simply greatly reduce the quantity. There is therefore room for apples and pears, fruits more traditionally used for various cakes and desserts, but also for persimmons, figs, plums, mandarins, kiwis and grapes.
The latter is one of my favourites. Let's not stop at the idea that it is annoying and time-consuming to clean the grapes to remove the seeds, because it really can be done in an instant, especially if we buy certain pulpy table grapes with large grains. Or let's simply focus on purchasing the seedless one which is now very widespread.
We can add grapes to delicious muffins just like the ones I propose today, to be made with the Mulino Marello cake mix to be combined with brown rice flour to increase the presence of fibre, or to cakes and biscuits.
A very versatile and certainly welcome ingredient. It lends itself to combining with dried fruit, in particular with pine nuts or walnuts, but also with cocoa, carob or cinnamon.
Start with this recipe to experiment and prepare these ideal breakfast treats. Eat about ten grapes together on an empty stomach to promote the purifying action of the grapes and continue with a cup of green tea. Wrap them and give them to your children for a snack at school or for an afternoon snack, for a tasty but easily digestible and light break that allows them to continue with energy and concentration.
