Ingredients:
150 gr fine corn flour for cakes
100g organic almonds
3 organic dates
2 tablespoons corn oil
1 teaspoon of natural yeast
Approximately 150 ml of water
Preparation
Chop the almonds in a chopper or blender together with the dates. To the almond flour obtained, add the fine corn flour, the natural yeast, the oil, and finally the water, just enough to obtain a soft mixture. Pour into a cake or plumcake mold and cook in the oven at 180 degrees for about 15-20 minutes. Consume within 4 days.
Curiosity
The dessert I propose is inspired by the many traditional recipes of our country which have corn as their basic ingredient.
This splendid cereal arrived in Italy in 1500 and in a short time became the nourishment par excellence of the peasant population. Over time its use has been linked to polenta, but also to bread and simple desserts. Let's think of the Venetian gialletti, the krumiri of Casale Monferrato, the sbrisolona of Mantua, the parrozzo of Abruzzo.
I thought of a recipe that had the scent of the simplicity of the past and that gave value to its ingredients.
The sweet corn and almond bread has no butter, milk, eggs or sugar. Only fine corn flour, the fine Mulino Marello flour, stone ground and obtained from a mixture of glassy corn with ancient native Piedmontese varieties, organic Apulian almonds, organic dates, a little bit of corn or extra virgin oil and water.
A healthy and genuine dessert, rich in nutrition, naturally sweet despite the absence of sugar or other sweeteners.
A smart choice for breakfast for the whole family, to bring to the table with a cup of green tea and fresh seasonal fruit. A dessert truly suitable for everyone, for athletes thanks to the richness of magnesium, potassium and iron, for those who need to keep blood sugar at bay thanks to the glycemic index content, for those looking for a digestible and light dessert, for children who will find an unexpected delicacy in this recipe, perhaps to be filled with a cream.
