APPLE FILLED WITH RICE AND CINNAMON CUSTOM CREAM

Ingredients for three apples

three organic gala apples

300 ml organic rice or almond drink

40 gr Mulino Marello white rice flour

a teaspoon of cinnamon

a spoonful of natural sweetener of your choice (optional)

zest of half an organic lemon 

Procedure

Wash the apples, cut the top and remove the core of each one. Dig inside a little to give more space to the cream, but don't throw away the extracted pulp, add it to a fruit salad, a juicer or breakfast porridge. Cook the apples in the oven at 60 degrees for about 20 minutes so that they soften.

Separately, prepare the vegetable custard by placing the rice or almond drink, white rice flour, cinnamon, lemon zest and a natural sweetener if desired. Mix and boil for a few minutes until it thickens well. Let cool.

When the apples are warm and the cream has cooled, stuff the apples and complete with another 10 minutes of cooking. Stuffed apples can be served cold, but hot they are really delicious. Bring to the table after sprinkling more cinnamon and if you like add walnuts or hazelnuts. 

Curiosity

Mulino Marello white rice flour is an ingredient to always have at home because we can really use it in many different ways.

I really like it when used to thicken creams or béchamel sauce as it is delicate in flavour, subtle and gives an excellent result very similar to starch.

This cinnamon vegetable custard is light and fragrant, ideal to eat with a spoon or to accompany a slice of gluten-free panettone. With apples, however, it is truly exceptional and allows you to make the classic baked fruit delicious and satisfying!

A dessert does not necessarily have to be rich in cream, chocolate, sugar or fat, on the contrary, it is important to return to simple tastes, to authentic pleasure, to the essentials.

Cinnamon in this season and close to the Christmas holidays is a must to enrich our desserts with aroma and sweetness. I remember that it is hypoglycemic and a concrete strategy to use for those who have problems with blood sugar.

Baked apples filled with cinnamon cream are however a gentle dessert, rich in fibre, sweetened in a natural way. Must try!
