I think there is no more versatile vegetable in the kitchen than pumpkin!
From cream soups to risottos, from gnocchi to lasagne, baked or steamed, raw in salad or juice, but also meatballs and vegetable pies up to recipes for cakes and spoon creams. All we need to do is go against our own tastes and adapt this wonderful gift from the garden to our liking.
The pumpkin is an excellent source of vitamins A, E, C, minerals such as potassium (more than bananas!), zinc, magnesium, copper and selenium and antioxidants.
In fact, like all orange vegetables and fruits, pumpkin is rich in beta-carotene useful to combat aging and macular degeneration, to protect the circulatory system and, together with lycopene, to prevent cancer.
The abundance of fibers make it an ally in case of constipation, while the presence of amino acids and in particular of tryptophan which helps the body produce serotonin, making it suitable for those suffering from anxiety and insomnia as it facilitates relaxation and good mood.
It cannot therefore be missing from our tables, especially in this particular period in which we are subjected to stress, anxiety and need to strengthen our immune system.

I thought of three pumpkin-based recipes that were original, genuine and suitable for the tastes and needs of the whole family... like bread pumpkins, pumpkin flavored and shaped sandwiches. To be filled as we wish, for example with a cream of peas, champignon mushrooms and rocket, to stay on the vegetable side.
The pumpkin and turmeric lasagna, with a wonderfully intense color thanks to the addition of this beneficial spice, prepared with sheets of rice and corn and a vegetable béchamel sauce based on brown rice. Because lasagna can also be like this, simple, without the need for butter, milk or cheese, extremely light and digestible. And a dessert couldn't be missing, because pumpkin has the advantage of helping us naturally replace our sweeteners or at least reduce the addition of sugar or other syrups. The combination with chocolate is truly a winner, I guarantee, not only as a sensory experience, but also for the immediate positive effect on mood!
