VALENTINE'S DAY BISCUITS

Ingredients
90 g butter temp. environment
80 g granulated or icing sugar
1 tablespoon baking powder
3 whole medium eggs
1 tablespoon olive oil
1 grated lemon zest
1 pinch of cinnamon
Equipment: rolling pin, baking paper, baking tray, biscuit moulds.
Procedure

In a bowl, mix all the ingredients with a spoon, then begin to work the dough vigorously with your hands until you obtain a compact and homogeneous dough. Let the dough rest in the fridge for 30 minutes.

After resting, take the dough and roll it out with a rolling pin (helping yourself with a little leftover mixture or rice flour) on top of the baking paper, to a maximum thickness of 5 mm.

Take some heart-shaped molds and start forming the biscuits, remove the excess dough.

Bake in a hot oven at 180°/190° for about 20/30 minutes.
They should be golden brown, but be careful not to burn them, check the oven temperature from time to time.

Let the biscuits cool before eating them and garnish them with icing sugar to taste (optional).
