Mix all the ingredients in a bowl, work well with your hands until you obtain a compact and homogeneous dough. Let it rest in the fridge for 30 minutes. After the indicated time, sprinkle a work surface or pastry board with a pinch of flour and roll out the dough with a rolling pin. You decide how thick to make the biscuits. With some Christmas molds you can start shaping your biscuits. Place them on a baking tray covered with baking paper and cook them in a preheated oven at 180° for approximately 10/13 minutes (check, the surface must not burn).
Let the biscuits cool and in the meantime prepare the icing: beat the egg white until stiff and slowly mix in the icing sugar until you have a dense and homogeneous mixture, place it in a piping bag with a fine, smooth nozzle and decorate the biscuits as you like.
Let them rest for about 5 minutes to allow the icing to solidify and serve.
