STRAWBERRY RISOTTO

Ingredients for 2 people

160 gr White or wholemeal Carnaroli rice

Vegetable broth

1/2 onion 

250g strawberries

extra virgin olive oil to taste

spreadable cheese to taste 

Procedure

Fry the onion.

Add the rice and toast it lightly.

Pour in the broth little by little and cook.

Halfway through cooking, pour in the previously blended strawberries. 

Continue with the broth and cook the rice.

If you prefer, stir in a knob of spreadable cheese, plate and enjoy.
