In 2013 we decided to open our mill choosing to deal exclusively with gluten-free flours, addressing those who suffer from this intolerance and celiac disease, offering everyone the opportunity to approach a healthy and natural diet, without giving up the unique flavors and pleasures of the table.
As a young farmer curious to discover and re-evaluate the traditions of the area, Guido thought of recovering some too ancient Piedmontese native corn varieties, making its extraordinary organoleptic, gustatory and chromatic qualities stand out.
We decide to go against the grain and create gluten-free flour mixes without adding thickeners, gums, sugars or other added ingredients and of stone grind cereals to guarantee tastes and flavors even in the flour.
Together we create the best flours for every type of preparation and study the simplest and most creative recipes to make with our gluten-free flours.
