FRESH EGG PASTA WITHOUT GLUTEN

KNEAD BY HAND
Ingredients for 4 people
2 tablespoons of olive oil
4 whole medium eggs salt to taste
Procedure

Mix all the ingredients in a bowl, work well with your hands until you obtain a compact and homogeneous dough. Let it rest for 10 minutes at temp. environment.

You can work the dough in the pasta machine or with a rolling pin, to create tagliatelle or shapes as you like. Cooking times approximately 7/8 minutes (depending on the format).
