300 gMix of natural flours for tarts and biscuits

40 g cocoa bitter powder

100 g rice oil

40 g water

2 medium eggs

1 middle egg yolk

100 g granulated sugar


In the planetary bowl sift the mixture of natural flours for tarts and Marello mill biscuits along with bitter cocoa powder.

Add the water, rice oil, eggs and yolk, granulated sugar and kneading at minimum speed, work up to create a fairly homogeneous compound.

Turn over a slightly floured worktop and form a dough, cover with food film and resting in the refrigerator for at least 30 min.

Use as a tart or biscuits.
