In a bowl mix all the ingredients with a spoon, after which you start working the pasta with your hands energetically until you get a compact and homogeneous dough. Let the pasta rest in the fridge for 30 minutes.
After rest take the pasta and spread it with the rolling pin (helping you with a little advanced mixture or rice flour) on top of the baking paper, up to 5 mm thick.
Take some heart-shaped molds and start forming the cookies, remove the excess dough.
Bake in a hot oven at 180°/190° for about 20/30 minutes.
They must come golden, but be careful not to burn them, check the temperature of the oven from time to time.
Let the biscuits cool before eating them and garnish them with icing sugar at will (optional).
